A Gerbeaud 1948-tól 1984-ig, Vörösmarty Cukrászda néven üzemelt. Az államosítás után, először a Reprezentatív Vendéglátó Igazgatóság működtette, majd 1957-től az Országos Idegenforgalmi Szálloda és Étterem Vállalat (OISZÉV) vette át. 1965-től a Hungária Szálloda és Étterem Vállalat, később a HungarHotels üzemeltette. Végül, mivel az idők változnak, Gerbeaud Emil Magyarországra érkezésének 100. évfordulóját méltó módon megünnepelendő, a patinás név visszavételéről határoztak. Swiss confectioner and chocolate manufacturer Mr. Emil Gerbeaud, (Carouge, 22 February 1854 - Budapest, 9 November 1919). He moved to Hungary in 1884 and joined Henrik Kugler's confectionery on Gizella Square in Budapest (now Vörösmarty Square), where a café was opened.

Gerbeaud Confectionery operated from 1948 to 1984 under the name Vörösmarty Confectionery. After the nationalization, it was first operated by the Representative Catering Directorate, and from 1957 it was taken over by the National Tourist Hotel and Restaurant Company (OISZÉV). From 1965 it was operated by Hungária Hotel and Restaurant Company, later by HungarHotels. Finally, as times change, it was decided to take back the patinated name to celebrate the 100th anniversary of Emil Gerbeaud's arrival in Hungary. After a positive response from the heirs, from 1984 the name Gerbeaud can be read again on the facade of the building in Vörösmarty Square.
